Chicken with Oranges & Prunes
Chicken leg quarters in an orange, mustard and date-syrup marinade with prunes — a festive dish that practically cooks itself in the oven.

Ingredients
- 5 chicken leg quarters, cut
- 1 large onion, sliced into rings
- 4 cups orange juice
- 6 tbsp mustard
- 4 tbsp date syrup (silan)
- 1/2 tsp coarse salt
- 1/2 tsp chili or black pepper
- 3 garlic cloves, crushed
- 1/2 package prunes (about 10)

In a large bowl, whisk the orange juice, mustard, date syrup, garlic, salt and chili/pepper until combined.

Add the chicken, onion rings and prunes and toss well so all the chicken is coated.

Cover and marinate in the fridge for at least 2 hours (overnight is best).

Preheat the oven to 180°C.

Transfer the entire contents of the bowl, liquids included, to a large deep baking dish.

Cover with foil and bake for about an hour.

Remove the foil, raise the heat to 220°C and bake for another 15–25 minutes, until the chicken is browned and the sauce has slightly reduced.
