Ingredients

For the cake

  • 3 cups self-rising flour
  • 6 eggs
  • 1 cup canola oil
  • 1 tbsp vanilla extract
  • 1/2 cup sugar
  • 2 tbsp cocoa powder
  • 1 cup chocolate milk powder
  • 1/2 cup chocolate spread
  • 1.5 cups water
  • 1/2 cup milk

Chocolate cream (for the layers)

  • 250 ml heavy whipping cream
  • 2 tsp chocolate instant pudding mix

Instructions

  1. 1

In a large bowl, mix all the wet ingredients: oil, milk, water, eggs and vanilla extract.

  2. 2

Add all the dry ingredients: self-rising flour, sugar, cocoa and chocolate milk powder, and mix until nearly smooth.

  3. 3

Add the chocolate spread and gently mix until the batter is smooth — don't overmix.

  4. 4

Pour the batter into a parchment-lined springform pan.

  5. 5

Bake in an oven preheated to 180°C for about 40 minutes, or until a toothpick comes out dry.

  6. 6

Make the chocolate cream: whip the cream with the chocolate instant pudding mix until stiff.

  7. 7

Once the cake has cooled completely, slice it into layers and spread chocolate cream between each layer.

  8. 8

Reassemble in the springform pan and freeze for 2 hours. Take it out 30 minutes before serving, carefully release the sides and serve.
